Eggs from young hens have stronger whites and poach much better than eggs from older hens laid on the same day.

It's easy to identify eggs laid by young hens. They have smooth, thick, dark shells

Method

When buying eggs to poach choose eggs with thick, smooth, dark shells and make sure that there is still at least 3 weeks to go before the Best Before date.
