Zucchini Frittata

1/2 cup chopped onion
1 cup shredded zucchini (and slices for top decoration)
1 teaspoon cooking oil
3 eggs, beaten
1/4 teaspoon salt
Pepper to taste
1 cup shredded cheese - cheddar, swiss, or edam
Method

Preheat 20cm ovenproof pan over medium heat. Add oil. Saute onion and zucchini for 2-3 minutes.

Pour beaten eggs over top; sprinkle with salt and pepper. Cook until almost set - approximately 6-7 minutes.

Sprinkle with cheese. Cover with uncooked zucchini slices.

Bake at 180 deg C for 4-5 minutes or until the cheese is melted on top, and lightly golden.
Serve hot or cold.
